Ammonite, from Burgundy, France, specializes in spontaneously fermented wild ales. The beers are made with minimal intervention. No additives, no yeast, no sugar are added to them. They are pure natural products, aged in old wine barrels or amphorae, and are bottled either as blends or single barrels.

Absolute handwork goes into every bottle of Ammonite. The fruit for certain beers comes from the region. Ammonite founder Simon Lecomte brewed his first beers in 2018, and while they were aging, he renovated a 17th-century barn where he will brew his beers in the future.
