Cantillon Gueuze
The Gueuze from probably the most authentic Lambic brewery, ever: Brasserie Cantillon. It is a blend of one, two and three year old Lambic that is refermented in the bottle. While the mature 3-year-old Lambic adds the funky wild aromas to the beer, the "young" one-year-old Lambic provides the necessary proper freshness and sugar for the refermentation in the bottle. From the blended Lambic, the carbonated gueuze can thus be created. The pleasantly fresh acidity and fruitiness blends perfectly with the tart notes of the wild yeast and the wood barrel. This beer also matures wonderfully in the bottle, so that a longer storage at home can be useful.
