A barrel aged American Wild Ale that has been additionally aged on apricots!
This beer is insanely versatile. Trillium ferments their Wild Ales with their proprietary New England Mixed Fermentation yeast. This creates complex yeast esters that perfectly complement stone fruit notes and barrel aging. Before this beer was fermented on apricots, it aged for 16 months in French oak Chardonnay white wine barrels. The taste is pleasantly acidic, intensely fruity and has slight hints of wood and white grapes.
