The Oude Kriek from 3 Fonteinen is aged with whole cherries for six to eight months using young Lambic. Then the beer is aged for at least another 4 months. During this time, the spontaneous fermentation of the beer begins. The result is a complex cherry Lambic that features not only a balanced acidity but also wonderful aromas of cherries and Brettanomyces.
