Outstanding Geuze and part of the Tilquin Family Tree Project!
For their Family Tree Project, Tilquin brewed exciting creations in honor of various family members. The Paul is dedicated to brewer Pierre's grandfather, who passed away in 2005. The blend is 30% 1-year-old lambic, 30% 2-year-old lambic, and 40% 3-year-old lambic, so with a higher percentage of older lambic. Overall, the beer was then aged in the bottle for an additional year. Notes of green apple, citrus, oak and grape combine with a complex acidity and a dry finish.
