For this “classic” version of Zenne y Frontera, lambiks from no fewer than five different barrels that previously contained sherry were blended together. The barrels come from very old Oloroso and Amontillado barrels from two small family bodegas: Bodega Joséfa Perez in the heart of Jerez de la Frontera and Gutiérrez Colosia in El Puerto de Santa María. The lambics, which had been aged for more than three years, were aged for an additional year in these sherry barrels. As a result, the weighted average age of this cuvée is over 50 months.
