Traditional lambics matured in three aquavit barrels were used for this Akevitt Lambik. The barrels had previously stored PX sherry for over fifty years and aquavit for more than ten years and come from Atlungstad, Norway's oldest distillery still in operation. The two-year-old 3-Fonteinen Lambik was stored in these barrels for over 13 months. At the time of bottling, the weighted average age of the cuvée was over 33 months. All of the brewing grain used comes from farmers in the Pajottenland region.
