Honey Lambic


For this Cuvée Miel, a three-year-old honey lambic was blended with young lambic in a ratio of 66/34. When brewing the oldest portion in early 2022, honey from our own beehives in the Schaarbeekse cherry orchard was added to the cooling lambic wort. The same honey was also used again during the subsequent blending process. At the time of bottling, the weighted average age of this cuvée was over 28 months. Almost all of the grain used is sourced locally in the Pajottenland region. 100% 3 Fonteinen.
