Brasserie Cantillon | Lambic & Gueuze
Cantillon is certainly one of the most sought-after Belgian breweries among Lambic lovers. The brewery was founded in 1900 and is now managed by Jean-Pierre van Roy. Only spontaneously fermented beers are produced on the historic brewery premises, which are aged and fermented in wooden barrels for several years. Spontaneously fermented beers can only be brewed in winter, so Cantillon can only produce in winter. This type of brewing, whose most important ingredient is wild yeasts from the air, was almost extinct worldwide and has survived in Belgium in a few breweries. Cantillon is very difficult to obtain because of the high demand, the costly and time-consuming production and the limited capacities.
